Ingredients
- 4-5 oz Salmon
- 1 Lemon
- 1 Apple
- 1 tbsp Brown Sugar
- 2 tsp Dijon Mustard
- 4 tbsp Plain Greek Yogurt
- Arugula, Mixed Greens Salad Mix
- 1 oz Almonds
- Heat drizzle of olive oil on a pan over medium-high heat. Pat salmon dry with paper towel. Season with salt and pepper. Add to pan skin-side down. Cook to desired doneness, about 3-6 mins per side.
- Halve lemon and core apple. Thinly slice apple.
- Place brown sugar in a bowl. Squeeze in one half of lemon and stir to dissolve sugar. Add mustard and yogurt, salt and pepper to taste.
- Place salad mix in a large bowl, add apple and almonds. Squeeze more lemon and drizzle the olive oil to toss and combine.
- Place cooked salmon on top and drizzle with dressing and voila!
